The dough portioner VDD807 with integrated cutting device was specially developed for gentle and continuous dough portioning. With portioning capacities of up to 320 portions per minute and weights of 100 g to 2,000 g, the dough portioner guarantees exact portion sizes and maximum flexibility without the use of dividing oil.

As an efficient solution for the industry, the VEMAG dough portioner VDP230 has an enormous output capacity. It portions at top speed in two lanes with extreme weight accuracy. Therefore, the VDP230 is the optimal attachment for increasing productivity. The VDP230 dough portioner accurately portions wheat-based doughs for toast, sandwiches, pizza, and much more with maximum output. The innovative unit offers up to 160 portions per minute and per lane. Thus, the total capacity of the line is 320 p/min and covers all the requirements of modern industry.
The dough portioners of the HPE series are suitable for the portioning of different bread doughs. Both stiff bread doughs and soft doughs can be gently processed. In combination with the cutting device ASV811, it is possible to cut up to 140 portions per minute with high precision. Depending on the product and customer requirements, either a knife or a wire cutter is used.
The ASV811 can be combined with all dough portioners of the HPE series as well as with existing machines.
The lowerable filling device for bread boxes KFE consists of a dough portioner of the HPE series and a filling unit. The dough is fed to the KFE and portioned into the baking tins by means of a filling flow divider and filling heads. A magnetic conveyor belt ensures precise feeding of the tins to the filling heads. The filling heads are lowered after the sensors detect the baking tins. The speed of the dough portioner and the conveyor belt are perfectly synchronized, which allows optimal positioning of the dough in the baking tin. This lays the foundation for an even baking result.
From hamburger buns to English muffins to hot dog buns - the dough portioner of the HPE series in combination with the Servo Cutter can be used flexibly. The dough flow is divided into four, six, eight or more lanes by an automatic Filling Flow Divider. The downstream Servo Cutter separates individual portions with high weight accuracy. If required, the line can be extended by a VEMAG Belt Rounder . The portions are loaded onto the belt rounder, formed and fed to the downstream process.
Depending on the product, the Servo Cutter achieves output rates of up to 200 cycles/min.

The Servocrimper is a universally applicable module for the production of a wide variety of round or cylindrical filled baked goods. The attachment can generate a filling content of up to 70 percent of the end product volume and is also suitable for chunky masses. The filling, such as cream cheese, is always positioned exactly inside the product. The module operates with 100 cycles on one and two lanes and with 80 cycles on four and six lanes.
Whether pogachas, samosa, salteñas, empanadas, pierogi, seadas, pelmeni, Maultaschen or simply dumplings with sweet or savory fillings - our attachment can be used to make a wide variety of baked goods. Different doughs and fillings can be processed. Moreover, the module can be used to produce filled dough pockets with different weights and forms.
The dough portioner HP1 can be used, e.g. in combination with the Portioning Table to gently process rye and wheat doughs or gluten-free doughs with different dough yields. The HP1 portions stiff or soft doughs weight accurately. The dough portioner does not require any dividing oil.
The dough portioner Robot500 and the Rotary Filling Head863 portion rye, whole-grain, and gluten-free doughs as well as various masses directly into baking tins and tin clusters. Portion weights from 50 g to 10,000 g can be produced.
With the dough portioner HP1 and the cutting device ASV812 doughs can be portioned and cut. The single-lane cutting device has a cutting capacity of up to 100 portions per minute and is optionally equipped with a knife or a wire cutter. Portion weights range from 5 g to 30,000 g.
The cutting device ASV811 can weight accurately portion a wide product range of doughs such as whole grain, rye and mixed rye doughs as well as wheat doughs and gluten-free doughs. The ASV811 divides up to 140 portions per minute, with portion weights ranging from 5 g to 30,000 g. The attachment ASV811 can be used with the dough portioner Robot500 as well as with the dough portioners of the HPE series .
With the cutting device ASV811, up to 140 portions of wheat dough per minute can be cut to produce hamburger buns and other small baked goods. Not only wheat doughs but also rye and mixed rye doughs as well as gluten-free doughs can be cleanly divided.

The attachment can be used to produce filled baked goods in a single lane or in multiple lanes. The Servocrimper can generate a filling content - whether a savory cheese filling or a sweet fruit filling - of up to 70 percent percent of the end product volume and is also suitable for highly chunky masses. The filling is always positioned exactly inside the product. Pastries can be produced in a wide variety of shapes, such as cylinders, cones, as well as balls and drops.
The VEMAG modular system has been developed for processing and production of various baked goods. The system consists of a dough portioner and modular, interchangeable attachments. This allows the production of a wide variety of breads, small baked goods as well as fine baked goods, filled products and bars. The attachments and accessories are precisely tailored to our dough portioners. For example, a dough portioner can be converted in just a few steps from a system for producing cookies and bread (ASV) to a system for portioning softer masses such as sand masses or sponge cake mixtures (filling head). If required, thanks to the modular system the machine adapts to your changing and growing demands and thus helps with the manufacturing of new product ideas and always ensures the desired pastry quality. You always have the perfect solution from a single source. Our modular machines can also be integrated into existing production lines via appropriate interfaces - simple, flexible and safe when it comes to automating processes.
While developing and programming the control system, we made sure that the machines could be operated easily and intuitively. In general, VEMAG machine housings are made of stainless steel and are encapsulated. This prevents product residues or flour dust from indtruding sensitive machine components. Same applies for water during possible wet cleaning. All mechanical components are easily accessible and the relevant electrical components are separately encapsulated. This proven box-in-box system is a unique selling point of VEMAG machines and guarantees both maximum hygiene and unique machine availability.
